Salmon Teriyaki Bowl

Ingredients

5.3 oz (150 g) salmon fillet, raw

1.6 oz (45 g) basmati rice, dry

3.5 oz (100 g) broccoli, raw

2.1 oz (60 g) bell pepper, raw

2 tbsp teriyaki sauce

1 garlic clove, minced

1/2 tsp fresh ginger, grated

1 tsp sesame seeds, optional

1 green onion, sliced

Salt & black pepper, to taste

Instructions

Season the salmon with a little salt and black pepper.

Cook the salmon in a pan over medium heat for about 4–5 minutes per side, or until cooked through. Brush with teriyaki sauce during the last minute of cooking.

Cook the broccoli and bell pepper in the same pan for 3–4 minutes, until tender but still slightly crisp.

Add the cooked rice to a bowl and top with the vegetables and salmon.

Drizzle with the remaining teriyaki sauce and sprinkle with sesame seeds and green onion.

Serve immediately.
