Creamy Tuna Pasta
with Lemon

Ingredients

2.8 oz (80 g) dry pasta

1 can tuna in water, drained (about 4.2 oz / 120 g)

⅓ cup (80 g) light crème fraîche

¼ cup (40 g) green peas

¼ cup (40 g) corn

1 tsp lemon juice
-
1 tsp lemon zest
-
Salt and black pepper, to taste

½ tsp garlic powder
-
½ tsp dried parsley
-
A splash of pasta water, if needed
Instructions

Cook the pasta according to the package instructions. Reserve a little pasta water before draining.

Add the light crème fraîche, lemon juice, lemon zest, garlic powder and parsley to a pan over low heat. Stir until combined.

Add the peas and corn and cook for 2–3 minutes.

Stir in the drained tuna and gently heat through.

Add the cooked pasta and toss everything together. Add a splash of pasta water if the sauce needs to be thinner.

Season with salt and black pepper and serve with a little extra lemon zest if desired.
