Ingredients

4.2 oz (120 g) lean ground beef

7.1 oz (200 g) raw potatoes

½ cup (75 g) cherry tomatoes, halved

½ cup (50 g) cucumber, diced

1 cup (50 g) shredded lettuce

1 tsp olive oil
-
½ tsp paprika
-
½ tsp garlic powder
-
Salt and black pepper, to taste
Tzatziki

¼ cup (60 g) Greek yogurt
-
2 tbsp (30 g) grated cucumber
-
½ tsp garlic powder
-
1 tsp lemon juice
-
Salt and black pepper, to taste

Fresh dill, optional
Instructions

Preheat the oven to 425°F (220°C).

Cut the potatoes into bite-sized pieces and toss with olive oil, paprika, garlic powder, salt and pepper.

Spread the potatoes on a baking sheet and roast for 25–30 minutes, turning halfway through.

Meanwhile, cook the ground beef in a skillet over medium-high heat until browned and fully cooked. Season with salt, pepper and a little extra paprika if desired.

Mix all the tzatziki ingredients in a small bowl.

Add the roasted potatoes, ground beef, lettuce, tomatoes and cucumber to a bowl.

Top with tzatziki and serve.
