Baked Salmon
with Potatoes & Creamy Yogurt Sauce

Ingredients

5.3 oz (150 g) raw salmon fillet

7.1 oz (200 g) raw potatoes

3.5 oz (100 g) broccoli

1 tsp olive oil

Salt and black pepper, to taste

½ tsp garlic powder

½ tsp dried dill

Lemon wedges, for serving
Creamy Yogurt Sauce

¼ cup (60 g) Greek yogurt
-
1 tsp lemon juice
-
½ tsp dried dill
-
¼ tsp garlic powder

Salt and black pepper, to taste
Instructions

Preheat the oven to 400°F (200°C).

Cut the potatoes into bite-sized pieces. Toss with olive oil, salt, pepper and garlic powder. Roast for about 25–30 minutes.

Season the salmon with salt, pepper and dill. Add it to the oven with the potatoes and bake for about 12–15 minutes, or until the salmon is cooked through.

Steam the broccoli until tender.

Mix all the ingredients for the yogurt sauce in a small bowl.

Serve the salmon with the roasted potatoes, broccoli and creamy yogurt sauce. Add a squeeze of fresh lemon if desired.
